If you’d told me last year that – this year – Brian Newberry would be a certified “vegetarian”, I would have laughed, and then reached for the nearest cheeseburger!
Still new to the world of vegetarianism, I am always elated when I discover some new veggie food that I can actually enjoy.
The latest is a sandwich I call “Green Brian”.
- 3 cooked falafel balls
- Uncooked baby spinach
Spread liberal amounts of hummus on each slice of bread. Add guac, onions, and salsa. Add dry leaves of spinach.
Meanwhile, you’re microwaving 3 or 4 falafel balls; then flatten them onto the bread. Add pepper, as desired. Connect the two pieces of bread to form a sandwich, and DEVOUR!!!
From the perspective of a “Big Guy”, I can truthfully attest – not only is this absolutely delicious – but it’s extremely filling, and will stave even the biggest appetites till the next feeding time! 😉
